I introduced a new post topic that I will be doing occasionally. The purpose of these Meal of the Moment posts are to find ways to create new meals using leftover food. Please see the original post here for more details. For this meal, I needed to use up about 2 cups of leftover red enchilada sauce and about one pound of crumbled pork sausage.
I chose to make a breakfast dish by doing the following:
Beat 8 eggs and add some dry mustard, pepper, and salt.
Cook some frozen hash browns and season with onion powder, garlic salt, and pepper.
In a casserole dish add the hash browns and crumbled sausage. Pour eggs over the mixture. Then pour enchilada sauce over everything.
Top with shredded Monterrey jack and sharp cheddar cheese.
Bake covered in 350 degree oven for 40 minutes or until set.
Serve piping hot with a bit of sour cream and green onions if desired! :)
