Two Weekend Breakfast and Mother's Day Brunch IDEAS



Hot breakfast mornings are the sweetest!  They play the perfect tone for our short pair of weekend days that we use to relax and just soak up life's goodness.   



Wake up, Sunshine.




Typically, I LOVE to adorn my tables with a bundle of fresh flowers!  Most of you know that about me.  I buy fresh cuts from the grocery store clearance shelves.  However, these beauties were given to me as a random surprise from my lover. ;)




To keep it easy when setting the table for starter meals, I just put a basket of napkins and flatware out with a stack of plates, buffet style.



I have TWO simple menus to share for our late springtime and also for ideas to use for Mother's Day brunch!


The first menu:







 

Fresh fruit circled together in a blender with ice is a refreshing {and healthy} start to the weekend sunshine.

Mango Pineapple Weekend Smoothies:

  •  2 bananas
  •  2 fresh mangos peeled and diced
  •  4-5 fresh pineapple slices
  •  1 teaspoon orange extract
  •  1/2 teaspoon xanthan gum (only needed to make it frothy)
  •  scoop vanilla protein powder
  •  remaining fresh pineapple juice
  •  1/2 cup skim milk or coconut milk

Blend and sip!

The kids love fruit smoothies!





For the main dish, I kept the classic egg, but just dressed it up a bit!

Cracked Egg Pies with Turkey Bacon Crust and Chives
adapted from Williams Sonoma

  • Prepare your favorite pie crust dough. Chill in refrigerator.
  • Bake turkey bacon in oven and crumble.
  • Gently mix turkey bacon into pie crust.
  • Line crust in muffin tins or pie forms and bake until lightly   browned.
  • Quickly crack an egg into each form and sprinkle with salt, pepper, shredded cheese, and chives
  • Return to oven and bake until eggs are set.

The second Mother's Day brunch idea is pure FRENCH INDULGENCE!


Croque Monsieur Croissants 

sliced ham between buttery croissants with sharp mustard and flavorful Gruyere cheese...

  Choose a fun mustard with a bite.

 

Spread mustard on halves and toast in oven lightly.

Squeeze ham slices in between:


Top with Gruyere cheese sauce.


Bake and enjoy!


   

I served this rich dish with fresh broccoli and sliced cantaloupe.
