Healthy Fruit Summer Snacks for Kids (PART TWO)

This is PART TWO of a 2 part blog series 
on healthy POWERSNACKS for kids.

I have 3 snacks to share today:

Fresh Fruit Cones
 
I had some leftover ice cream cones from my Mom's Neapolitan Party.  I wanted to find some creative way to use them up.  I thought of a LOT of fun things you can stuff into a sugar cone, but I decided fresh fruit sounded best for sweet summertime.  
 

First, cut and combine all your fruit.  Then, stir in just a bit of 7up to help your fruit hold it's color.  You can also squeeze in lemon juice and water instead of 7up.

Once you have your beautiful bowl of fresh fruit, you can gently spoon some into the cones for the KIDS.  To keep the juices from dripping out the bottom of the cone, fill the cones with a couple mini dark chocolate chips or micro mini marshmallows before adding fruit.


Then, PRESTO...total cuteness in a cone!



Our little people love snacks made special JUST FOR THEM.

Yogurt-Stuffed Raspberries
This next fruit treat was inspired from my newest addiction, Pinterest.  I found chocolate stuffed raspberries there via Saucy Sprinkles.  This isn't the first time she has inspired me! She's one aMazIng girl.  She simply placed chocolate chips upside down into the raspberries!  

You can also fill raspberries with:
no bake cheesecake filling
chocolate mousse 
custard
pudding
frosting
whipped cream cheese
frozen yogurt

I filled ours with some healthy POWERSNACK energy food: plain-nonfat yogurt, honey, and almond extract. After gently mixing it, I spooned some in a pastry bag and froze it slightly.  I waited until it was slush-like consistency to make it easy to squeeze into the berries. 

Two little squeezes and they're ready to pop into some cute little mouths!  
These are the perfect bite-sized snack.


Last one...

Apple Brie Quesadillas

These can be made for a hearty little lunch too.  I thinly sliced apples and soaked them in a lemon juice/water bath to help them not brown. 

Then I sauteed onions and arugula in olive oil.  I seasoned with pepper and garlic salt.  You can season with rosemary too if you desire.  I spread the brie on whole wheat tortillas and added my apples and arugula/onion mix.  Then I folded them in half and cooked in my Panini Bread maker until the tortillas were crispy. 
     



Delicious fuel for our day!


 Creating wholesome treats for my little people during their active summer days is my little housewife duty...and gosh I love this whole "homemaker" job, so I'm soaking up every second!

  1. Where was I for the yogurt stuffed raspberries? Those look incredible! I can vouch for the scrumptiousness of the fruit filled cones. I would definitely ask to have those again.

  3. With our Grands it's not how to get them to eat fruit...it's how to get them stop! They love fruit! I'm going to try the cone idea! I think they'd get a kick out of that!

  13. The fruit cones remind me a fruit spring rolls! You just use fruit instead of veg, and a peanut butter dipping sauce (sweet, or plain). I'll have to post a recipe for them.

  14. What a creative (but simple, and I LOVE simple!) way to serve fruit! Most of my kids love fruit, so I have no problem getting them to eat it.... veggies are a whole different story.

    I plan to pack a BUNCH of spinach into their smoothies/popsicles this summer! If the smoothie is dark enough they don't notice at all! I'll be making up the popsicles in the next couple of weeks, and then I'll post combinations I come up with!
