Meal of the Moment: Open Faced Italian Sandwiches

I have another MEAL OF THE MOMENT for all you lovelies. To read about why I first started this topic and what it's all about click here. The main point is to find creative ways to use up leftover foods.

This time I needed to use up some leftover chicken breasts that we BBQ'd last night. They were Italian Marinated Chicken breasts. There are trillions of ways to use up leftover chicken, so this should be an easy one! However, I wanted to focus on something SIMPLE and PAINLESS...you can throw this together faster than waiting in line at Taco Bell.

OPEN FACED ITALIAN SANDWICHES

You'll need Cheese Kaiser Rolls

And Mozzarella slices

And Pizza Sauce

And of course our chicken sliced into smaller pieces

Spread the sauce over the sliced bread. Always put the cheese on top of the meat so the chicken won't dry out. Broil on low with the oven door open until cheese bubbles.

TIP: Buy the freshest bakery bread you can find, this makes ALL the difference! Your sandwiches will definitely taste better with super fresh bread.

I served it with a tall glass of extra cold milk and salad, topped with my favorite homemade blue cheese dressing (which I talked about here). I hope that satisfies your tastes and for more MEAL OF THE MOMENT posts click here.

  2. Oh, dear daughter of mine, how I love your ideas! You add sparkle to my days! I have so much fun reading your blog as well as spending whatever time I can with you. Being with you, or reading your blog, is better than reading the best magazine to collect fun or helpful ideas. I have some leftover chicken so,... and then later this week how about lunch so I can delight in your sense of humor and more ideas. Love you, love you!

I SO treasure EVERY comment. I am not able to respond individually to each one anymore, although I TRULY wish I could! It is hard for me to say that because I love hearing from everyone and sharing back. I still try my best, but it may take awhile! :)

ALSO, I am unable to link up to new link up parties due to time constraints. Thank you for your understanding.

Thank you for EACH lovely note! <3 I appreciate YOU.
